Aunt Doris's Ice Cream Cake Recipe

Recipe 2 cups ready to eat high protein cereal ½ cup flaked coconut ½ cup coarsely chopped walnuts ¼ cup brown sugar, firmly packed 1 ¼ cup margarine or butter, melted 1 quart vanilla ice cream, softened
Mix together: protein cereal, flaked coconut, chopped walnuts, and brown sugar. Add melted margarine or butter and toss lightly to combine. Press half of mixture into a buttered 8-inch square pan. Spread evenly with a layer of vanilla ice cream. Sprinkle with remaining cereal mixture. Press down lightly.
Cover; freeze until firm. Cut in squares and serve with your favorite ice cream sauce.
Makes 9 servings.
Memory Aunt Doris Rentner loved children, birthdays and ice cream. She taught first grade for 40 years in Neenah, Wisconsin. Aunt Doris was delighted to find this recipe for an ice cream cake and made it for every birthday. It combined three of her favorite things: birthdays, ice cream and family. Soon our family renamed the dessert, Aunt Doris Ice Cream Birthday Cake.
