Mrs. Foley's Cookie Bars Recipe
Recipe 1 cup chocolate chips 2 cups flour (optional substitute ½ cup oatmeal for ½ cup flour) 1 cup butter or margarine soft, not melted ½ cup white sugar ½ cup brown sugar 1 tsp baking powder (optional) ½ tsp baking soda ½ tsp salt 1 Tbsp water 2 egg yolks
Mix all ingredients together (add chocolate chips last). This makes a very stiff dough. Press into a 9x13 pan ungreased.
Icing: Beat 2 egg whites until stiff. Add 1 cup brown sugar. Spread onto cookie mixture and bake for 25-30 minutes at 325 degrees. As a test, toothpick will be sticky, but it will firm up when it cools. Do not overbake.
Memory This cookie bar was brought to every carry-in dinner at church. You had to hurry to get a piece it was so delicious! We always referred to it as Mrs. Foleys and though she is in heaven now we still enjoy her recipe!
